sauce verte


- un gros bouquet de persil

- 2 grosses tiges de menthe fraîche

- 50g de câpres égouttées

- 2 cc de moutarde

- 2 cs de jus de citron

- 1 gousse d’ail préssée

- 15cl d’huile d’olive

- sel, poivre, un peu de piment de Cayenne



  1. Lavez le persil et la menthe, ôtez les queues.
  2. Mixer tous les ingrédients au robot, goûtez et rectifiez l’assaisonnement.

Cette sauce accompagne parfaitement tous les légumes grillés, et s’avère particulièrement délicieuse avec les asperges vertes!

Brochettes de poulet, sauce au yaourt

  • 3 escalopes de poulet
  • 1 poivron vert
  • 1/2 concombre
  • 250 g de tomates-cerises
  • 200 g de champignons de Paris frais
  • 2 yaourts natures à 0 % de MG
  • 1 c. à café de moutarde en grains
  • 3 c. à soupe de jus de citron frais
  • 2 c. à soupe d’huile d’olive
  • 1 c. à soupe de ciboulette hâchée
  • 1/2 c. à café de cumin en poudre
  • sel, poivre



  1. La veille, coupez les filets de poulet en petits morceaux et laisser-lez mariner toute la nuit dans 2 c. à s. de jus de citron et 2 c. à s. d’huile d’olive. Remuez de temps en temps
  2. Le jour même, lavez les champignons et coupez les en morceaux assez gros
  3. Coupez le poivron en lanières
  4. Préparez vos brochettes en alternant morceaux de champignon, poulet mariné, morceaux de poivron et tomates cerises.

Pendant que vous faites griller les brochettes au BBQ, préparez la sauce au yaourt.

  1. Pelez le concombre et coupez le en petits dés
  2. Mélangez le yaourt, les graines de moutarde, le concombre, le jus de citron restant, le cumin et la ciboulette

Uncle Torvald And His Sauce

America is a nation that can’t live without barbecues. Grilled spareribs, grilled salmon, grilled chicken, grilled lamb chops; everybody loves them. If I’m not mistaken, even diabetics who have strict diet programs can eat barbecues without the worry of putting their health in danger. There are many barbecue recipes available in cookbooks, and in the Internet that are dedicated for diabetes patients. Why don’t you try to follow this recipe and feed your family with it at least once a week? If you have someone in the family who is suffering from the disease, help lessen their burden by preparing healthy, and great-tasting food for them.

My uncle Torvald has been diagnosed with diabetes last year. However, his sickness doesn’t hinder him to become the best barbecue cook in our family. In this particular entry, I’m going to share one of his special sauce recipes. I like this sauce because it gives any grilled food a sweet and sour taste.

Combine and simmer for twenty minutes these ingredients for your healthy sauce:

A can of fresh tomato sauce
2 cups water
1 teaspoon salt and pepper
2 teaspoons chili powder
Half teaspoon cinnamon
2 teaspoons paprika
Onion, shredded
1/4 cup vinegar and Worcestershire

Teriyaki Marinade and BBQ Sauce

Once summer has started, it is sure that barbeque will take the front seat and so is the sauce. Remember that the secret to a perfect barbeque is the sauce and you can only achieve the perfect mixture by making one of your own. Here is an easy-to-prepare barbecue sauce I got from Meal-Master.

1 cup Soy Sauce
1 cup Water
2 teaspoon Vinegar
2 teaspoon Brown Sugar
1 teaspoon Dry Mustard
1/2 teaspoon Powdered Ginger
1/2 teaspoon Garlic Powder
1 teaspoon Hot Pepper Sauce (optional)
2 tablespoon Corn Starch

Whisk together all the ingredients except the corn starch. Marinade the meat long enough to flavor and tenderize- 1 hr for young chicken breasts or fish, overnight for round steak and up to 5 days for some game cuts. BBQ and baste with the marinade. Make a slurry of the starch and a little water and whisk into the marinade. Bring to a boil, stirring as the sauce thickens. Serve with the BBQ’d meat. The secret of the sauce is in the spices, i.e., garlic and ginger. You can also use as a substitute wine, orange, sherry or pineapple juice for some or all of the water.

World’s Best BBQ Sauce

Some say that the secret to a good-tasting zesty barbeque is in the cooking, while others say that its in the tenderness and juiciness of the meat. But a lot of people think, even I myself, it’s in the sauce. A good sauce is one that can turn your ordinary meat, whether its poultry, pork, or beef, into an amazing grilled dish that even kids will love beyond doubt. If you’re making barbeque make sure to pay attention with the sauce because it’s what make a barbeque a sure hit to your family. Here’s a recipe of the barbeque sauce they call World’s Best BBQ Sauce:

2 cups brewed black coffee
2 cups Worcestershire sauce
3 cups catsup
1 1/2 cup apple cider vinegar
1/2 cup Dejohn mustard
1 1/2 cup brown sugar
1/2 cup honey
1/2 cup sweet soy sauce
1 large onion, chopped
1 Anaheim pepper, chopped
8 garlic cloves , minced
5 Tablespoons chili powder
1 Tablespoon crushed cumin
Juice of one lemon

Combine all the ingredients into a huge pot and bring into a slow boil. Simmer the sauce for two hours and strain. The sauce is ready for use.

Cranberry Maple Barbeque Sauce

Any outdoor activity, whether it is a family picnic, camping or just a very simple cookout, would not be complete without our all-time favorite barbeque. And of course every barbeque deserves a great-tasting sauce. In America, there are different types of barbeque sauces that are being used to prepare this delicious treat.

But the most original and oldest of these sauces is the vinegar and pepper sauce. This sauce dates back to hundreds of years in history. Since then, the barbeque sauce has evolved into other variants that equally add flavor and savor to our favorite barbeque. Here is a unique variation of the barbeque sauce that you should try when making zesty barbeques at home.

The ingredients are the following:

1 tsp oil
1/4 cup chopped onion
1 cup Cranberry Sauce
1/2 cup maple syrup
1/4 cup ketchup
1/4 cup cider vinegar

Heat the oil in a non-stick sauce pan. Sauté the onion until it is soft. Put into the saucepan the other remaining ingredients and bring it to a boil. Simmer for twenty minutes while stirring it occasionally. Put the mixture into a blender and blend it using high speed. Stop blending when the mixture is smooth. Store it in the refrigerator for a week. Use the sauce to marinate the meat.

Coca cola Barbeque Sauce

Barbecues are present in almost all gatherings especially the simple ones. They are sometimes served as appetizers. They are also perfect for outdoor cooking activities because they are very easy to prepare. But you must know that a barbecue would not be complete without the equally delicious sauce. Here is a sauce that would certainly make more delightful barbecues.

1 can of coke (12 oz.)
1 1/2 cups of ketchup
1 cup of onion chopped finely
1/4 cup of cider vinegar
1/4 cup of Worcestershire sauce
1 tsp. chili powder
1 tsp. salt
hot sauce of pepper

1. Mix all the ingredients in a sauce pan.
2. Bring the mixture to boil and let it cook for 30 to 45 minutes over a medium fire.
3. Stir it occasionally until the sauce thickens
4. Season with the sauce of hot pepper.

The process is very simple, so you can do it the next time you go for outing with your family. It is also very affordable.

A Richer Rib Sauce

As previously mentioned in an earlier post, ribs are great for barbecues. They are fantastic appetizers and a great meal in itself as well. You know what would make those ribs more scrumptious? A rich barbecue sauce! I’ve seen most people use ketchup as an ingredient in making their barbecue sauce. Well, that’s fine but if you want a richer, thicker sauce, you’re better off using tomato paste and tomato sauce. Believe me, its way better than using your favorite condiment for your sauce.

Here are the things you need to make a rich barbecue rib sauce:

1 can tomato sauce
1 can tomato paste
2 tablespoons brown sugar
2 tablespoons vinegar
2 tablespoons olive oil
3 cloves garlic crushed
4 tablespoons minced onion
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon cayenne
fresh ground pepper to taste

Now that you have gathered all the ingredients, the first thing you want to do is cook the onions and garlic in the olive oil until the onion turns opaque. Then, simply add all the ingredients in the pot. Mix them thoroughly and let it sit simmering for 20 minutes. This recipe makes about 1 1/2 cups.

Root Beer Sauce

Root beer is one of the more famous beverages out there. It’s great on its own, but even better if you put some vanilla ice cream with it to make a root beer float. That’s not all what root beer is good for though, I found out that it’s also a great ingredient for making a barbecue sauce. That’s right, root beer as the base for a barbecue sauce. So, here’s what you need to make your Root Beer sauce:

1 cup Root Beer (I’m not brand specific, your favorite root beer will do)
1 cup tomato sauce (You can use ketchup as substitute)
1/4 cup fresh lemon juice
1/4 cup orange juice
3 Tbsp Worcestershire sauce
1-1/2 Tbsp dark brown sugar, packed
2 Tbsp cane Syrup
1 tsp liquid smoke
1/2 tsp lemon peel, grated
1/2 tsp ground ginger
1/2 tsp granulated garlic
1/2 tsp onion powder

All you have to do is combine all the ingredients in a saucepan. Let your concoction boil over medium heat while you stir occasionally. Once it boils, turn down the fire and let the mixture simmer for about 20 minutes or until it is reduced to 1 ½ cups. Season with salt and pepper and set it aside to cool down. It is recommended that you make this sauce about 2 weeks in advance and keep it refrigerated.

Dreamland Barbeque Sauce

I must say, the name of this sauce recipe is truly applicable for its taste. Try this one out on your next barbeque party.

The Dreamland Barbeque Sauce consists of a can tomato puree, 1/3 cup yellow mustard, 3 cups water, 1 1/2 cups cider vinegar, 1/4 dark corn syrup, 2 tablespoons lemon juice, 2 tablespoons sugar, 2 tablespoons packed brown sugar, 2 tablespoons chili powder, 1 tablespoon dry mustard, 1 tablespoon paprika, 2 teaspoons ground red pepper, 2 teaspoons onion powder, 1 teaspoon salt, 1 teaspoon ground black pepper, and a 1/2 teaspoon garlic powder (whew!)

Whisk the tomato puree and mustard in a saucepan until smooth. Add the other ingredients and bring to a boil. Simmer and stir occasionally. Voila, Dreamland Barbeque Sauce for your barbeque!
