Stuffed Grilled Salmon

You’ve probably already tried smoked salmon or having it fried, but has grilled salmon been served in your plate? How about stuffing your salmon with mouth watering filling? Here’s one you can add to your favorite barbecue recipes.

Grilling is one way of reducing food fat to make your food healthier. Here are the ingredients for the stuffing:

3 slices bacon
1 large onion
4 cloves garlic
2 tablespoons chopped parsley
10 fresh sage leaves
1 teaspoon ground oregano
1/2 teaspoon fennel seed
1/4 teaspoon black pepper
1/4 teaspoon salt
1 whole salmon
6 slices of lemon
Olive oil

Sauté all the ingredients for 4 minutes, then set it aside to let it cool. Lay salmon, skin side down, on work surface; season flesh with sea salt and pepper. Lay 3 lemon slices on each side of salmon. Spread chilled stuffing on one side and fold other side of salmon over the mixture.

The salmon must be grilled for 45 minutes. Don’t forget to turn it once halfway grilling time. Before serving, remove the salmon from grill and let stand for 10 minutes.
This may seem as grilling as cooking any other kind of fish but here are also some grilling hints to remember. Salmon, like all other fish, cook rapidly on the grill, so you better be on the watch! Another thing is that having the fish covered with foil prevents it from direct contact with fire which means that what you would be eating is nothing but grilled fish and not burnt fish.

Some people like tossing the fish every once in a while which is not good – once is enough to prevent its flesh from breaking up. If you are in doubt if the fish is already cooked, insert a paring knife and take a good look inside – if it already looks translucent in the center, you can now remove it from the grate.
